    Sizzling beef fajitas for your next Mexican fiesta.

    Serves: 4 

    • 4 tablespoons olive oil
    • 4 tablespoons lime juice
    • 4 garlic cloves, minced
    • 2 teaspoons grated lime zest
    • 1 green chilli, seeded and minced
    • salt and pepper to taste
    • 400g beef fillet, sliced into strips
    • 1 red pepper, sliced into strips
    • 1 red onion, sliced into wedges
    • 5 spring onions, sliced
    • 2 tablespoons chopped fresh coriander
    • 8 flour tortillas
    • To serve
    • lime wedges
    • salsa
    • soured cream
    • guacamole

    1. In a bowl, combine the oil, lime juice, garlic, lime zest, chilli, salt and pepper. Place half of the mixture in a resealable plastic bag; cover and refrigerate remaining marinade. Add beef to bag. Seal and turn to coat; refrigerate for 4-8 hours.
    2. Drain and discard marinade. In a cast iron or heavy frying pan, heat 2 tablespoons olive oil over high heat. Once hot, add beef (discard the marinade in the bag), red pepper and red onion. Stir and brown slightly, then add the reserved marinade and reduce heat to medium. Cook and stir until beef reaches desired doneness, and veg is tender but still slightly crisp. Add the spring onions and fresh coriander, stir and remove from heat.
    3. Meanwhile, heat the flour tortillas in a microwave on high for 20 seconds.
    4. Serve the fajitas by bringing the frying pan to the table, with the tortillas and desired accompaniments. Let each person assemble their own fajitas.
