Pre-heat oven at 400-450 F/ 200 - 250 C /gas mark 6.
Place the chicken breast in a small roasting tin (remember to line tin with foil and brush with cooking oil, or if you have a wire rack - wrap foil around rack and brush with cooking oil. Place rack in tray with the chicken breast on top).
Mix the tomato puree with the herbs, lemon juice and water. Spread over the chicken breasts, coating them well.
Mix the two cheeses together and sprinkle over the chicken breasts.
Place in the centre of the oven and cook for approx 30 mins or untill cheese is golden and chicken cooked through.
