Vegetarian BBQ Triumph

    The word Barbeque makes most vegetarians cringe - and quite rightly - an unadulterated meat feast is not where they feel comfortable. Win the heart of a vegetarian by making a little effort to wow them with this recipe.

    Serves: 4 

    • Pesto Sauce
    • 1 clove garlic
    • 25 g basil
    • 25 g coriander
    • 25 g pine kernals
    • 125 mls Olive oil
    • 2 red peppers
    • 2 large aubergines
    • olive oil
    • sherry vinegar
    • 250 g goats cheese log

    1. Blitz the pesto ingredients in a food processor to make a coarse liquid.
    2. Blacken the skin of the peppers over the BBQ, or a gas flame if you want to work ahead. Scrape off skin, half each pepper and remove seeds.
    3. Cut the aubergines lengthwise into 4 slices, about 1.5 cm thick. Brush with a little olive oil and sprinkle with sherry vinegar. Season with salt and pepper.
    4. Cut the goats cheese into slices.
    5. Cook the aubergine on the BBQ until barely done. To each of 4 slices, add a layer of red pepper, then a layer of mozzarella. Top with the remaining aubergine.
    6. Put back on the BBQ until the cheese begins to melt, then serve immediately with the pesto.

    I took this recipe as inspiration - I marinaded the aubergine slices in the pesto for 4 hours in the fridge and then put them on the BBQ. I served with feta crumbed on top. It's true, veggie BBQ recipes don't tend to intice cooks but I really liked the pesto and would cook it again.  -  30 Jun 2009
