I took this recipe as inspiration - I marinaded the aubergine slices in the pesto for 4 hours in the fridge and then put them on the BBQ. I served with feta crumbed on top.
It's true, veggie BBQ recipes don't tend to intice cooks but I really liked the pesto and would cook it again. - 30 Jun 2009
