BBQ Rosemary and Dijon Mustard Marinated Chicken Breasts

These are the nicest marinated chicken breasts I have ever had. Then longer you leave the chicken to marinate, the more intense the flavour.

Ingredients
Serves: 4
- 4 chicken breasts
- For the marinade
- 75ml olive oil
- 60ml Dijon mustard
- 30ml lemon juice
- zest of 1 lemon
- 1 garlic clove, crushed or 1tsp garlic powder
- 1½tblsp fresh rosemary, chopped
- ½tsp chicken or all purpose seasoning (optional)
- salt and pepper

- Cut slits crosswise across the chicken breasts, making sure that you don't cut all the way through.
- Put all the marinade ingredients in a large sealable plastic bag and shake to mix. Then place the chicken breasts into the bag with the marinade. Marinade the chicken in the marinade from 1-24 hours in the fridge. Occasionally massage the chicken in the bag to ensure it is well marinated.
- Either heat the grill or your barbecue and grill the chicken breasts on both sides for 8-10 minutes on each side or until cooked through.
