About this recipe: These are the nicest marinated chicken breasts I have ever had. Then longer you leave the chicken to marinate, the more intense the flavour.

Serves: 4 

  • 4 chicken breasts
  • For the marinade
  • 75ml olive oil
  • 60ml Dijon mustard
  • 30ml lemon juice
  • zest of 1 lemon
  • 1 garlic clove, crushed or 1tsp garlic powder
  • 1½tblsp fresh rosemary, chopped
  • ½tsp chicken or all purpose seasoning (optional)
  • salt and pepper

Prep:15min  ›  Cook:25min  ›  Ready in:40min 

  1. Cut slits crosswise across the chicken breasts, making sure that you don't cut all the way through.
  2. Put all the marinade ingredients in a large sealable plastic bag and shake to mix. Then place the chicken breasts into the bag with the marinade. Marinade the chicken in the marinade from 1-24 hours in the fridge. Occasionally massage the chicken in the bag to ensure it is well marinated.
  3. Either heat the grill or your barbecue and grill the chicken breasts on both sides for 8-10 minutes on each side or until cooked through.
