About this recipe: Delicious textured balls, easy and cheap to make they are great for kids as a quick summer dinner served with a baked potato, crunchy fresh salad and cheese sauce.

Serves: 5 

  • 450g pork mince
  • 2 eggs
  • 1 packet of natural breadcrumbs
  • 1 apple (diced)
  • 1/2 leek (diced)

Prep:10min  ›  Cook:15min  ›  Ready in:25min 

  1. In a bowl combine the mince, 1 egg, 1/2 the breadcrumbs along with the apple and leek.
  2. Bring together with fingertips.
  3. Mould the mixture into 8-10 'meatball' shapes.
  4. Gently beat the second egg into a small container and place the rest of the breadcrumbs onto a plate.
  5. One by one roll the 'meatballs' in the beaten egg then thoroughly coat with the breadcrumbs.
  6. Place on baking tray for 15-18 minutes or until cooked through. Alternativley you can deep fry these for about 5-6 minutes or until golden and crispy.
  7. My suggested serving is with a crunchy salad, baked potato and cheese sauce.

They were lovely, the crunchy crumbs, apple and leek were delicious, the recipe could have been a little clearer (i.e. amount of breadcrumbs), and maybe 2 eggs to bind better and then a further one to cover in breadcrumbs, I served mine with mash, cabbage and gravy and me and my son loved it!! - 20 Jul 2013
