Maryanne's potato croquettes

    There is no big story, just potatoes fried in crispy breadcrumbs. You can also make these with leftover mashed potatoes.

    • potatoes
    • flour
    • breadcrumbs
    • egg, beaten
    • salt and pepper
    • oil for deep frying

    1. Boil potatoes, mash in usual way. Allow them to cool. Shape mash into croquettes, roll them in flour (lightly dusted) dip in beaten egg roll in breadcrumbs. Deep fry. Season with salt and pepper; serve at once.
