Hawaiian Chicken

    When I was younger my aunty always used to make this for me in the summer and said one day I would go to Hawaii and have it in a proper restaurant. Next year I am due to be married to the most amazing woman ever and am going there on honeymoon, I can't wait!!

    Serves: 4 

    • 125ml soy sauce
    • 1 tablespoon of garlic, minced
    • 1 tablespoon of ginger, minced
    • lemon juice
    • crushed chillies
    • 1/2 teaspoon brown sugar
    • 4 x chicken breasts or chicken drumsticks, or other pieces

    1. Combine the marinade ingredients in a saucepan and simmer until the sugar dissolves. Cool and use to marinate the chicken over night in the fridge.
    2. Barbecue the chicken over medium heat when the charcoal has gone grey until it's thoroughly cooked. Serve with barbecued fresh pineapple slices.
