    About this recipe: A warm sliced cake best served with butter and lashings of hot tea.

    Serves: 10 

    • 175g chopped dates
    • 250ml boiling water
    • 1 tsp bicarb
    • 1 tsp vanilla extract
    • 175g dark brown soft sugar
    • 60g butter
    • 50ml oil
    • 1 egg
    • 180g self raising flour
    • 100g walnut pieces

    1. Preheat oven to 180 C / Gas 4. Grease and flour a cylindrical tin.
    2. Combine dates, bicarb, vanilla, butter and oil and boiling water in a large bowl. Stand for 15 mins.
    3. Combine flour, sugar, nuts and egg in a large bowl. Add date mixture and stir well.
    4. Pour mixture into prepared tin and bake for 45 minutes. Close both ends and stand on a tray. Cool in tin before serving sliced and spread with margarine.
