Blueberry lemon pots

    These easy peasy dessert pots use fresh fruit and shop bought ingredients to make a remarkably delicious summer pud.

    • 300g fresh blueberries
    • 1 pot whipping cream, whipped
    • 8 tablespoons lemon curd
    • 10 gingernuts, crushed
    • fresh mint leaves, to garnish
    • 4 glasses, to serve

    1. In each of four glasses, layer first with a small bit of cream, then lemon curd, then the crushed ginger nuts, then blueberries. Repeat, ending with a layer of blueberries. Garnish with fresh mint leaves. I prefer this after having it chill in the fridge for at least an hour.
