About this recipe: My family love lasagne, but sometimes I lack the time for the long version. This is easy and satisfies everyone. Try it tonight!

Serves: 12 

  • 450g lean mince
  • 2 (400g) jars pasta sauce
  • 900g cottage cheese
  • 350g grated mozzarella cheese
  • 2 eggs
  • 50g grated Parmesan cheese
  • 2 teaspoons dried parsley
  • salt and ground black pepper to taste
  • 9 lasagne sheets
  • 125ml water

  1. In a large frying pan over medium heat brown the mince. Drain the fat. Add pasta sauce and simmer for 5 minutes.
  2. In a large bowl, mix together the cottage cheese, 2/3 of the mozzarella cheese, eggs, 1/2 of the grated Parmesan cheese, dried parsley, salt and ground black pepper.
  3. To assemble, in the bottom of a 22x33cm baking dish evenly spread about 175ml of the sauce mixture. Cover with 3 uncooked lasagne sheets, 1/3 of the cheese mixture and 4 tbsp sauce. Repeat layers twice. Top with 3 lasagne sheets, remaining sauce, remaining mozzarella and Parmesan cheese. Add 125ml water to the edges of the dish. Cover with aluminium foil.
  4. Bake in a preheated 180 C / Gas 4 oven for 45 minutes. Uncover and bake an additional 10 minutes. Let stand 10 minutes before serving.

Altered ingredient amounts. I put 4 sheets in a square, any more than that makes it stiff. I served this with a nice loaf of tiger bread and they went really well together. - 08 Feb 2010


Very tasty indeed. I changed the amounts of the ingredients to make enough for 4 people. The cottage cheese really compliments the rest of the dish. I will be using this one again for sure. - 02 Oct 2013
