In a large frying pan over medium heat brown the mince. Drain the fat. Add pasta sauce and simmer for 5 minutes.
In a large bowl, mix together the cottage cheese, 2/3 of the mozzarella cheese, eggs, 1/2 of the grated Parmesan cheese, dried parsley, salt and ground black pepper.
To assemble, in the bottom of a 22x33cm baking dish evenly spread about 175ml of the sauce mixture. Cover with 3 uncooked lasagne sheets, 1/3 of the cheese mixture and 4 tbsp sauce. Repeat layers twice. Top with 3 lasagne sheets, remaining sauce, remaining mozzarella and Parmesan cheese. Add 125ml water to the edges of the dish. Cover with aluminium foil.
Bake in a preheated 180 C / Gas 4 oven for 45 minutes. Uncover and bake an additional 10 minutes. Let stand 10 minutes before serving.
Very tasty indeed. I changed the amounts of the ingredients to make enough for 4 people. The cottage cheese really compliments the rest of the dish. I will be using this one again for sure. - 02 Oct 2013
