Melt butter with olive oil in a large frying pan over medium heat. Add asparagus spears and cook, stirring occasionally for about 5 - 8 minutes, or to desired firmness. Drain off excess oil, and sprinkle with Parmesan, salt and pepper.
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
