    About this recipe: Quick and easy asparagus side dish that's ready in a flash!

    Ingredients
    Serves: 5 

    • 1 tablespoon butter
    • 2 to 4 tablespoons extra-virgin olive oil
    • 500g (1 lb) fresh asparagus spears, trimmed
    • 75g (3 oz) freshly grated Parmesan
    • Sea salt and freshly ground black pepper to taste

    1. Melt butter with olive oil in a large frying pan over medium heat. Add asparagus spears and cook, stirring occasionally for about 5 - 8 minutes, or to desired firmness. Drain off excess oil, and sprinkle with Parmesan, salt and pepper.

    Parmesan cheese

    Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
