About this recipe:This cheesy broccoli quiche is an easy way to sneak some more green vegetables into your family's diet!
2 tablespoons butter
1 onion, minced
1 teaspoon minced garlic
175g fresh broccoli, chopped
1 (23cm) prepared pastry case
175g grated mozzarella cheese
4 eggs, well beaten
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon butter, melted

Preheat oven to 180 C / Gas 4.
Over medium-low heat melt butter in a large saucepan. Add onions, garlic and broccoli. Cook slowly, stirring occasionally until the vegetables are soft. Spoon vegetables into pastry case and sprinkle with cheese.
Combine eggs and milk. Season with salt and pepper. Stir in melted butter. Pour egg mixture over vegetables and cheese.
Bake in preheated oven for 30 minutes, or until centre has set.
Altered ingredient amounts.
I used 300 ml of milk but the quiche turned out too liquid anyway and the crust was bland. I think it is a good idea either to pre-bake the crust or use 250 ml milk and maybe 3 eggs instead of 4 - 16 Feb 2010
