225g grated courgette
2 eggs, beaten

In a medium bowl, combine the courgette, eggs, onion, flour, Parmesan cheese, mozzarella cheese and salt. Stir well enough to distribute ingredients evenly.
Heat a small amount of oil in a frying pan over medium-high heat. Drop courgette mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
