    About this recipe: An old recipe that is good on any veg. You may adjust mixture of Gruyere and Cheddar to your taste.

    Serves: 16 

    • 60g butter
    • 4 tablespoons plain flour
    • a pinch of paprika
    • 1/2 teaspoon mustard powder
    • a pinch of black pepper
    • 1/4 teaspoon salt
    • 475ml milk
    • 75ml cooking sherry
    • 75g grated Gruyere cheese
    • 30g grated Cheddar cheese

    1. Melt butter in a medium saucepan over low heat. Stir in flour, paprika, mustard, pepper and salt. Pour in milk and sherry; cook, stirring constantly, until thickened.
    2. Stir in cheeses. Cook, stirring constantly, until melted and well blended.
