About this recipe:Chicken breasts with herbed cream cheese, wrapped in puff pastry and baked. A very easy but delicious dish, good for guests! This recipe is derived from a dish my mum-in-law makes.
1 tablespoon vegetable oil

4 skinless, boneless chicken breast fillets
1 (200g) tub cream cheese
1 tablespoon chopped fresh chives or 1 teaspoon dried
4 puff pastry sheets

Preheat oven to 200 C / gas 6. Lightly grease a baking tray.
Heat vegetable oil in a large frying pan over medium heat. Sprinkle chicken breasts with salt and pepper and place in hot oil; cook for 5 minutes, turning to brown evenly. Remove pan from heat.
Roll out pastry sheets as thinly as possible so that one is big enough to fit around a chicken breast. In a separate bowl, mix cream cheese with chives. Spread 1/4 of the cream cheese mixture on one chicken breast, place in the centre of a pastry sheet; fold the pastry around the chicken, and pinch the pastry edges together very tightly to seal. Repeat with remaining ingredients. Place the pastry-wrapped chicken breasts on a greased baking tray.
Very easy to prepare and delicious served with new potatoes with fresh herbs & butter. My step-son said I put in too much cheese, but my husband loved them, especially as I wrapped with bacon as well as pastry. - 17 May 2010
