Avocado Icing

    This is an icing that is great for Halloween because it's green! It is also a great icing alternative for vegans. Lemon or orange juice can be substituted for the lime juice.

    Serves: 24 

    • 2 avocados, peeled and stones removed
    • 1 tablespoon fresh lime juice
    • 450g icing sugar
    • 1 tablespoon vanilla extract

    1. Combine the avocado and lime juice in a bowl; mix with a hand mixer about 2 minutes. Add the sugar in small amounts while continually mixing until smooth. Mix in the vanilla extract.

    What a tasty and healthy alternative! Piece of advice - if making for a party, prepare this at the very last minute...after an hour the green gets darker, then after 2 hours, very dark green, and 3 hours its brown.     This is a fabulous alternative to frosting. It was tasty. My kids loved it. It has a citrus flavor, so I would only use it on lemon, orange, or other fruity-type cupcakes in the future. Also, it was a little runny and refridgeration didn't help it much.
