Watermelon Fizz

    I love watermelon in the summer, it is the perfect snack for a hot, sunny day. I was inspired to make my favourite summer snack into a cocktail. This sweet, fresh, pink hued cocktail has all the sparkle and zing that would please your guests at a summer bbq!

    Serves: 6 

    • 900g watermelon
    • 250ml of prosecco or cava
    • 2 tbsp lime juice
    • 1 tsp lime zest
    • 2 tbsp of mint to garnish
    • sugar syrup to taste

    Prep:10min  ›  Ready in:10min 

    1. Chill watermelon overnight in the fridge.
    2. Place watermelon, prosecco, lime juice, zest and process in the blender until smooth.
    3. Add sugar syrup to taste (to make sugar syrup - 2 parts sugar and 1 part water. Bring water to the boil in a saucepan and add sugar. Remove from heat once sugar is melted, cool and bottle).
    4. Pour into a collins glass or margarita glass and garnish with mint springs.

    Altered ingredient amounts. i actually didn't use sugar syrup b/c my watermelon was already quite sweet. however, i could see how if your watermelon wasn't very ripe or flavourful how it might need just a touch of syrup.  -  21 Aug 2009


    this was a really delicious and refreshing cocktail. i love champagne cocktails, and this was a nice change from a bellini or kir royale. it looked so pretty, too, esp since my watermelon was a nice deep red colour. i'd make this again in a heartbeat!  -  21 Aug 2009
