About this recipe:These mini quiches are so quick and easy you could get your little one to help you. They are great for entertaining, for kids' parties and as a snack and also great for school lunch boxes and can be whipped up in no time! If you don't have puff pastry I have made these without and they still come out really good.

Method Prep:10min › Cook:20min › Ready in:30min
Preheat your oven to 180 C / Gas 4.
Lightly grease 2 muffin tins (12 cup) with butter.
In a bowl, mix the eggs, bacon, onion, cheese, salt & pepper with a fork until all mixed together well.
Using a glass or pastry cutter, cut circles out of the puff pastry and place into the greased muffin cups. Spoon the mixture into the pastry. Bake in the oven for 15 - 20 minutes or until golden brown.
I did not quite have enough filling for 12, had to make a little more. Did not add cream but will next time as the filling was quite dense but very nice. I also cooked the onion in the microwave first as prefer soft onion. Also cooked the bacon in the microwave a little.
