Easy mini quiches

    These mini quiches are so quick and easy you could get your little one to help you. They are great for entertaining, for kids' parties and as a snack and also great for school lunch boxes and can be whipped up in no time! If you don't have puff pastry I have made these without and they still come out really good.

    Serves: 24 

    • 3 eggs
    • 4 rashers of bacon, diced
    • 1 small onion or 1/2 large, diced (you can use red onion for extra colour)
    • 2 tablespoons of Cheddar cheese, grated
    • 3 to 4 pre-made puff pastry sheets
    • salt and pepper to taste
    • dash of double cream, optional
    • sprinkle of fresh or dried parsley, optional

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat your oven to 180 C / Gas 4.
    2. Lightly grease 2 muffin tins (12 cup) with butter.
    3. In a bowl, mix the eggs, bacon, onion, cheese, salt & pepper with a fork until all mixed together well.
    4. Using a glass or pastry cutter, cut circles out of the puff pastry and place into the greased muffin cups. Spoon the mixture into the pastry. Bake in the oven for 15 - 20 minutes or until golden brown.

    I did not quite have enough filling for 12, had to make a little more. Did not add cream but will next time as the filling was quite dense but very nice. I also cooked the onion in the microwave first as prefer soft onion. Also cooked the bacon in the microwave a little. Hubby liked  -  18 Aug 2012


    i made these the other day for a picnic. They are lovely and were gone in seconds. i just used 2 sheets of pastry though as i only got 12 out of the mixture  -  30 Jul 2012
