Beautiful banana muffins

    I wanted to make my nan something yummy for her 65th birthday so I asked my mum and she gave me a recipe that my great nan had thought of so I thought I would share the recipe with you all.

    Serves: 6 

    • For the cake
    • 250g self raising flour
    • 150g caster sugar
    • 75g fine oat bran
    • 2 large ripe bananas
    • 2 eggs lightly beaten
    • 3 1/2 tbsp vegetable oil
    • 150ml milk
    • For the icing
    • 1 - 2 tbsp orange juice
    • 6 heaped tbsp icing sugar

    1. Preheat the oven to 200 c / gas mark 6. Line a 12-hole muffin tin with paper cases.
    2. Tip the flour, sugar and oat bran into a large mixing bowl and form a well in the centre.
    3. In another bowl, using a fork or potato masher to mash the bananas, then mix in the eggs, oil and milk.
    4. Pour the banana mixture into the dry ingredients. Using a wooden spoon, stir everything together for a few seconds until only just combined but still quite lumpy. The lumps will disappear during baking.
    5. Spoon the mixture into he muffin cases and bake for 15-20 minutes or until golden brown.
    6. Let the muffins cool for 2 minutes in the tin, then transfer to the wire rack to cool.
    7. For the icing: Add enough orange juice to the icing to make a smooth paste. Drizzle the orange icing over the muffins and leave to set before serving.

    Lovely, not too strong on banana but the oat bran gives it a lovely texture; simple to make  -  05 Jun 2011


    Something else. Lovely recipe; I added a few drops of Vanilla Extract and baked in mini-muffin cases for 12 minutes.  -  05 Jun 2011
