    Jam making needn't be a mystery - my blackberry jam recipe is truly foolproof!

    Serves: 80 

    • 1.75kg blackberries
    • 2kg caster sugar
    • 6 teaspoons powdered pectin
    • 1 tablespoon unsalted butter

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Place the blackberries into a large, heavy saucepan and crush them with a potato masher.
    2. Add the sugar and pectin and heat very slowly, stirring all the time until every grain of sugar has dissolved. Add the butter, increase the heat, bring to a full rolling boil and boil for exactly 4 minutes. Remove from the heat, cool for 1 minute, then place in jam jars and cover immediately.

    how long does this jam keep for once made and sealed?  -  12 Jun 2012


    We have never made jam before and dreaded making a sloppy compote! But success has struck and it is a great jam to try! Everybody, start making jam! Our only criticism is that is was just a touch bland and tasted like it could do with a squeeze of lime or something zingy. Any ideas?  -  30 Oct 2013
