Cheeky chicken curry

    A lovely chicken curry that my nan makes for special birthdays. She always has to make seconds because we all gobble it up and want more.

    Serves: 2 

    • 1 tablespoon oil
    • 1 medium onion, chopped
    • 3 gloves garlic, minced
    • 4-5 medium chicken pieces (any part you like)
    • 250ml coconut milk
    • 2 medium potatoes, quartered
    • 2.5cm piece fresh root ginger, chopped
    • 1 green pepper, chopped
    • 2 tablespoons curry powder (or to taste)
    • salt and pepper to taste
    • fish sauce (optional)

    1. Saute onion and garlic in oil on a saucepan or pot for about 2 minutes.
    2. Add chicken. Cook for about 5-10 minutes, turning chicken over occasionally to cook evenly.
    3. Pour in coconut milk. Add potatoes, ginger and green pepper. Stir for 3 minutes.
    4. Mix in the curry powder. Bring to the boil. Lower heat then simmer for about 5 minutes more or until all ingredients are cooked.
    5. Add salt and pepper to taste. Can use fish sauce for more flavour. Serve.

    Cook's note

    Instead of coconut milk, you can use coconut milk powder and water (amount indicated on the packet).

    Really great (and easy)! I used a bit more coconut milk because it didn't seem like the allotted amount would be enough, and then added some more garlic to taste. Absolutely delicious!  -  19 Oct 2013
