About this recipe:
This simple and tasty savoury frappé is a cool and refreshing way to get your five a day. If desired, you can also serve this as a cold summer soup.
2 avocados - peeled and stone removed
1 tablespoon orange zest
1 tablespoon lemon juice
1 teaspoon finely chopped ginger root
1 teaspoon salt
1 pinch ground black pepper
670ml (1 pint 4 fl oz) semi-skimmed milk
- Place avocados, orange zest, ginger, salt and pepper. Blend, adding milk a little at a time, until mixture is smooth.
- Pour into a carafe or jug, cover and refrigerate. Serve chilled in chilled glasses. Garnish with avocado slices if desired.
