About this recipe: Green goddess dressing was popular in the 70s - with it's gorgeous mix of flavours, why not start a revival? This is perfect over crisp and mild lettuce leaves, like romaine or little gem.


Serves: 6 

  • 1 avocado, peeled and stone removed
  • 225ml (8 fl oz) mayonnaise
  • 5 anchovy fillets, rinsed and chopped
  • 1 spring onion, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, chopped
  • salt and freshly ground black pepper to taste

  1. Combine all ingredients in a blender or food processor. Blend until smooth, and chill for 24 hours before serving.


If you want a dressing lighter in fat and calories, try substituting half of the mayonnaise (110ml) for half fat creme fraiche.
