225ml (8 fl oz) mayonnaise
5 anchovy fillets, rinsed and chopped
1 spring onion, chopped
1 tablespoon lemon juice
1 clove garlic, chopped

Combine all ingredients in a blender or food processor. Blend until smooth, and chill for 24 hours before serving.
If you want a dressing lighter in fat and calories, try substituting half of the mayonnaise (110ml) for half fat creme fraiche.
