Simple Fish Curry

    A nice quick fish curry that tastes like you've slaved over the cooker all day!

    Serves: 4 

    • 1 onion
    • 2 cloves of garlic
    • 2 tablespoons of hot curry paste
    • 1 can of coconut milk
    • 375g of fresh haddock fillets (or monk fish tail)
    • 375g of fresh cod
    • 10 raw tiger prawns
    • handful of chopped coriander
    • 1 lime
    • 1 stick of fresh lemongrass
    • salt and pepper to taste

    1. Finely chop onion and garlic (or whizz them up in food processor). Add to a large saucepan over medium heat, along with a drizzle of oil, and cook until fragrant.
    2. Add curry paste, reduce heat and then add coconut milk. Add fish pieces, cook until opaque. Add prawns and lime juice and chopped coriander. Serve on basmati rice.
