Pasta with parma ham and tomatoes

    A quick and easy pasta dish with parma ham, tomatoes, mushrooms and red onion.

    Serves: 2 

    • Enough pasta to feed 2 people
    • 10 parma ham strips, chopped
    • 1 tin of tomatoes
    • 4 shittake mushrooms, washed and finely chopped
    • 1 red onion, finely chopped

    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Boil the pasta until soft.
    2. Drain and place all pasta back into the pan - off the heat.
    3. Fry the onions and mushrooms until golden - add 1/2 tsp sugar to caramelise (optional)
    4. Add the tomatoes, cook for 1 minute.
    5. Add contents of the frying pan to the pasta, add parma ham, then mix well.
    6. Serve and enjoy
