Slow cooker pork cacciatore

    A wonderful Italian neighbour showed me how to make this recipe after I commented on how good it made the neighbourhood smell when she had her windows open whilst she made it. Cacciatore refers to food prepared 'hunter-style,' with mushrooms, onions, tomatoes, various herbs and sometimes wine. I found adding cheese gave it something special, it also made it mine.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 onion, sliced
    • 4 boneless pork chops
    • 1 (800g) jar pasta sauce
    • 2 (400g) tins chopped tomatoes
    • 1 green pepper, seeded and sliced into strips
    • 1 (250g) punnet fresh mushrooms, sliced
    • 2 large cloves garlic, minced
    • 1 teaspoon dried Italian herbs
    • 1/2 teaspoon dried basil
    • 125ml dry white wine
    • 4 slices mozzarella cheese

    1. In a large frying pan, brown pork chops over medium-high heat. Transfer to slow cooker.
    2. In the same pan, cook onion in oil over medium heat until browned. Stir in mushrooms and green pepper, and cook until these vegetables are soft. Mix in pasta sauce, chopped tomatoes and white wine. Season with Italian herbs, basil and garlic. Pour over pork chops in slow cooker.
    3. Cook on Low for 7 to 8 hours. To serve, place a slice of cheese over each chop, and cover with sauce.
