About this recipe:Mum cooked this fabulous recipe when I was very young, made with lean lamb chops and fresh chunky vegetables and lots of natural gravy, served with bread and butter. I have fussy eaters so i use some chops and some big pieces of steak, keeping everybody happy and all in one pot. If you have a chicken lover cut up a chicken breast and add to pot.
1kg lamb chops chump or mid loin or ½ lamb chops / ½ lean steak
2 large carrots, sliced thin
4 med potatoes, sliced thin
2 small onions, sliced thin
enough beef stock to cover
salt and pepper to taste

Trim chops add to pot. Slice potatoes, carrots and onions add to meat, cover with stock, season to taste. Cook on high for one hour, then turn down to low for about eight hours. Serve with crusty bread.
