    About this recipe: This started when we had grown an excess of leeks & were trying to use them up.

    Ingredients
    Serves: 2 

    • 3 med leeks, washed & chopped into 2 inch pieces
    • 1 gammon slice
    • 2 tbsp flour
    • 3 oz butter or marg
    • 3/4 pint of milk
    • 1 tsp cayenne pepper
    • salt & pepper to taste
    • 3 oz cheese
    • pastry of choice to top

    Method
    Prep:20min  ›  Cook:30min  ›  Ready in:50min 

    1. Cook leeks in boiling water for 5 mins.
    2. Chop gammon steak into small pieces (I have used lardons instead). Fry till golden.
    3. Make a white sauce with the flour, butter & milk. Stir in cheese, bacon and leeks and add seasoning.
    4. Pour into pie dish and cover with pastry.
    5. Bake at 190 C / gas mark 5 for 30 mins.

    Cook's note

    This mixture is also delicious topped with breadcrumbs and cheese instead of pastry and done as an oven bake.
