Mincemeat tea cake

    This is great served on a cold, wintry day. Use any kind of mincemeat, shopbought or homemade, and serve with butter or cream cheese. This cake happens to be dairy free.

    Serves: 12 

    • 250g plain flour
    • 100g caster sugar
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 1 egg
    • 1/4 cup vegetable oil
    • 1 tablespoon orange zest
    • 2 tablespoons orange juice
    • 550g prepared mincemeat

    1. Preheat oven to 180 C / Gas 4. Grease a 23x13cm loaf tin.
    2. Mix together the egg, oil, orange zest, juice and mincemeat, blending well. Combine flour, sugar, baking powder, bicarb and salt; add gradually to the egg mixture. Mix just until moist. Pour into prepared tin.
    3. Bake for 1 hour. Remove the loaf from the oven, and cool on a wire rack.

    I used half plain and half self raising flour and added a teaspoon of cinnamon. Didn't have an orange so used a lemon. I only used 3 tablespoons of mincemeat. I mixed everything (except the mincemeat) in my food processor in one go and then stirred in the mincemeat. Easy peasy! It came out very nice and will make it again using this method.  -  23 Nov 2012
