About this recipe: This is great served on a cold, wintry day. Use any kind of mincemeat, shopbought or homemade, and serve with butter or cream cheese. This cake happens to be dairy free.
I used half plain and half self raising flour and added a teaspoon of cinnamon. Didn't have an orange so used a lemon. I only used 3 tablespoons of mincemeat. I mixed everything (except the mincemeat) in my food processor in one go and then stirred in the mincemeat. Easy peasy! It came out very nice and will make it again using this method. - 23 Nov 2012
