In a large bowl, combine flour, sugar, baking powder and salt.
In a small bowl, beat eggs, then add milk, butter and lemon zest. Pour into dry ingredients and stir just until moistened - don't overmix otheriwse your muffins won't rise properly.
Spoon 1/2 of the muffin mixture into 12 muffin cups lined with paper cases (silicone cases work well too). Make a well in the centre of each; spoon in jam. Spoon remaining batter over jam. Bake at 200 C / Gas 6 for 20-25 minutes or until golden.
These Jam Muffins are lovely and would make them again my only 2 flaws are that they are a little heavy but yet light and my last flaw is the mixture is a little runny. but overall i give them 8/10 they are simply brilliant!!! x - 19 Nov 2010
