    Serves: 5 

    • 3 eggs
    • 180g self raising flour
    • two large spoons of ginger powder
    • 5 tbsp of caster sugar or soft brown sugar
    • 170g butter or margarine
    • small pinch of salt

    Prep:10min  ›  Cook:45min  ›  Ready in:55min 

    1. Mix everything together and once margarine or butter is soft, place in greased square, pyrex dish or tin. Place in middle of heated oven, 150 C. Takes about 45 mins or until spongy to the touch. Leave to cool and gently turn out.

    fantastic. i added much more ginger though, some mixed spice and cinnamon. it made it extra spicey  -  22 Sep 2010

    Cake was very light and Spongey, very tasty, although I did add a little more Ginger the second time I made it!  -  08 Jun 2010
