Red Sausage Stew

    This warm, delicious and surprisingly sweet dish is best served with bread for getting more of the sauce. It can however go nicely with rice, pasta, couscous or just about anything you'd like!

    Serves: 4 

    • 6 sausages
    • 1 tbsp olive oil
    • 1 roughly chopped onion
    • 1 seeded and sliced red chilli
    • 1 seeded and diced red pepper
    • 1 can (400g) of plum tomatoes
    • 300ml chicken stock
    • 2 tbsp sun-dried tomato paste
    • 1/4 tbsp basil
    • 1/4 tbsp black pepper

    1. Prepare the sausages either by grilling or frying them until they are slightly browned put them to the side.
    2. While the sausages cook, chop the onions, seed and slice the red chilli and dice the red pepper. Put oil in the pan and gently fry until they are all soft. When they are cool slice them.
    3. Bring the chicken stock to the boil. Add the peppers and onion when they are soft. Add the plum tomatoes and mush them in a bit. Add the tomato paste.
    4. Add the sliced sausages. Sprinkle basil and black pepper on to the top of the bubbling mixture and blend in.
    5. Serve once it smells right.
