125g butter, softened
300g caster sugar
250ml soured cream
1 teaspoon vanilla extract
250g plain flour
1 teaspoon bicarb of soda
1/4 teaspoon salt
225g mashed ripe bananas

1 (200g) tub cream cheese, softened
4 tablespoons butter, softened
125g sieved icing sugar
1/2 teaspoon vanilla extract

Preheat oven to 180 C / Gas 4. Grease a swiss roll tin.
In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the soured cream and vanilla. Combine the flour, bicarb and salt; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared tin.
Bake for 20 to 25 minutes in the preheated oven, until a skewer inserted into the centre comes out clean. Allow traybake to cool completely before icing with the cream cheese icing.
To make the icing: In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the icing sugar. Store in the refrigerator after use.

Great recipe! I substituted plain yogurt for sour cream and threw in some chopped walnuts, also used a bit less sugar (about 230g) and skipped the icing. It did take longer to bake than specified, but the cake came out lovely. I got plenty of compliments and requests for the recipe! - 29 Mar 2012
