Banana slices with cream cheese icing
These are a big hit with colleagues. Very moist and easy to make. If you like banana cake, you'll love this tray bake.
Ingredients

- 125g butter, softened
- 300g caster sugar
- 2 eggs
- 250ml soured cream
- 1 teaspoon vanilla extract
- 250g plain flour
- 1 teaspoon bicarb of soda
- 1/4 teaspoon salt
- 225g mashed ripe bananas
- Cream cheese icing
- 1 (200g) tub cream cheese, softened
- 4 tablespoons butter, softened
- 125g sieved icing sugar
- 1/2 teaspoon vanilla extract

- Preheat oven to 180 C / Gas 4. Grease a swiss roll tin.
- In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the soured cream and vanilla. Combine the flour, bicarb and salt; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared tin.
- Bake for 20 to 25 minutes in the preheated oven, until a skewer inserted into the centre comes out clean. Allow traybake to cool completely before icing with the cream cheese icing.
- To make the icing: In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the icing sugar. Store in the refrigerator after use.

Altered ingredient amounts. A year later and these are still a staple in my house! Just one thing to note, the two times I tried using bananas which were verging on over-ripe, they ended up quite heavy and stodgy. - 15 Apr 2011
Great recipe! I substituted plain yogurt for sour cream and threw in some chopped walnuts, also used a bit less sugar (about 230g) and skipped the icing. It did take longer to bake than specified, but the cake came out lovely. I got plenty of compliments and requests for the recipe! - 29 Mar 2012
