Baked pears

    This is a simple pud that showcases deliciously juicy pears. Serve warm or cold, with creme fraiche or whipped mascarpone if desired.

    • 2 medium ripe pears, peeled, cored and halved
    • 4 teaspoons butter
    • 1 teaspoon lemon juice
    • 2 teaspoons demerara sugar
    • 1/4 teaspoon ground cinnamon
    • 4 teaspoons orange marmalade

    1. Place pear halves, cut side up, in a shallow baking dish. Place butter in the centre of each; drizzle with lemon juice. Combine sugar and cinnamon; sprinkle over pears. Top with marmalade. Cover and bake at 180 C / Gas 4 for 15-20 minutes or until heated through.

    This is quite nice and couldn't be easier but I'm not sure the marmalade adds very much. Given the normal shape of a pear, does anybody know how to stop the juices running off the stalk end and congealing in the tin?  -  07 Feb 2012
