- 130g freshly grated Parmesan
- 120g butter
- 150g flour

- Rub together the butter and flour. Add the Parmesan. Work into a solid dough. Form a ball and store in the fridge in cling film for at least an hour, or overnight.
- Roll out the chilled dough between two sheets of parchment to a thickness of 1cm. Use a small biscuit cutter or a glass to cut into round biscuits. Reroll dough and cut further rounds, as many as possible. Place on a baking tray lined with parchment.
- Bake in a preheated 180 C / Gas 4 oven for 15 minutes. Cool before serving.
the recipe made 20x2 inch biscuits.I tweaked them a bit with fresh roasmery,they are absolutely delicious and very mourish.Great with a glass of wine in the garden and dead easy to make - 12 Sep 2010

I made these at Christmastime for a wine tasting and they were ideal. Just baked the 5th batch tonight for my bosses retirement brunch. Super easy and absolutely delish. - 12 Apr 2012
