Rub together the butter and flour. Add the Parmesan. Work into a solid dough. Form a ball and store in the fridge in cling film for at least an hour, or overnight.
Roll out the chilled dough between two sheets of parchment to a thickness of 1cm. Use a small biscuit cutter or a glass to cut into round biscuits. Reroll dough and cut further rounds, as many as possible. Place on a baking tray lined with parchment.
Bake in a preheated 180 C / Gas 4 oven for 15 minutes. Cool before serving.
