About this recipe: This easy to make shortbread biscuit is a melt in the mouth version of the classic, thanks to whipping the mixture before baking. Dotting them with glace cherries is a nice touch at Christmas.

Serves: 36 

  • 225g butter, softened
  • 200g plain flour
  • 60g icing sugar
  • glace cherries, halved

  1. Preheat oven to 180 C / Gas 4.
  2. In a large bowl, combine butter, flour and icing sugar. With an electric mixer, beat for 10 minutes, until light and fluffy. Spoon onto baking tray, spacing biscuits 5cm apart. Place a glace cherry halve onto the middle of each biscuit, but do not flatten the biscuits.
  3. Bake for 15 to 17 minutes in the preheated oven, or until the bottoms are lightly browned. Remove from oven, and let cool on baking tray for 5 minutes, then transfer to wire rack to cool. Store in an airtight container, separating each layer with greaseproof paper.

Tried this recipe twice both times a failure, seems to have too little flour for the amount of butter? Ended up with a grainy mess, have double checked quantities and cross referenced with other recipes and it would indeed seem to have too little flour?? shame, sounded good - 14 Dec 2011
