Fresh courgette relish

    A simple, colourful recipe prepared from fresh garden vegetables. Goes especially well with salmon.

    Serves: 4 

    • 125g chopped courgette
    • 85g chopped onion
    • 1 tablespoon caster sugar
    • 1 tablespoon chopped fresh basil
    • 2 tablespoons chopped red pepper
    • 2 tablespoons lemon juice
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper

    1. In a medium bowl, stir together the courgette, onion, sugar, basil, red pepper, lemon juice, salt and pepper. Cover and refrigerate until serving.

    Really nice. Easy, light, and flavorful. I think it would have been even tastier had I used the called-for fresh basil instead of the dried I had on hand. Be sure to chop the veggies into smaller bite-sized pieces.  -  17 Feb 2007  (Review from Allrecipes US | Canada)


    I had never really eaten zucchini before, so I figure this little recipe was a good way to introduce it into my diet.
