About this recipe: These individual molten chocolate cakes are so easy, but very impressive.

Serves: 8 

  • 225g unsalted butter
  • 225g plain chocolate, chopped
  • 5 eggs
  • 100g caster sugar
  • pinch salt
  • 4 teaspoons plain flour

  1. Preheat the oven to 230 C / Gas 8. Line a muffin tin with 8 large paper cases, and butter the cases.
  2. Melt the butter and chocolate together in a double boiler; remove from heat.
  3. Using an electric mixer, beat the eggs, sugar and salt until sugar dissolves. Beat the egg mixture into the chocolate mixture. Stir in flour until just combined.
  4. Spoon mixture into prepared cases. Bake in the preheated oven until cakes are puffed but not fully set; about 8 to 10 minutes. Carefully remove cakes from tin and serve immediately whilst warm.

Cook's tip

Alternatively, you can bake the cakes in 8 buttered ramekins.

Just made these and they came out great! When i first made i thought it was too runny but it turned out fine. Super quick and easy and they are still great even when cold! - 02 Dec 2013
