Eggless chocolate cake

    This is a delicious chocolate cake for those who can't have eggs, and even for those who can! It is also dairy free.

    Serves: 18 

    • 375g plain flour
    • 375g caster sugar
    • 1 teaspoon salt
    • 2 teaspoons bicarbonate of soda
    • 45g cocoa powder
    • 180ml vegetable oil
    • 2 tablespoons vinegar
    • 2 teaspoons vanilla extract
    • 500ml cold water

    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Sift flour, sugar, salt, bicarb and cocoa together into a 20x30cm ungreased cake tin. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork.
    2. Bake at 180 C / Gas 4 for 30 to 40 minutes, or until skewer inserted comes out clean. Ice with your favourite icing.

    Used different ingredients. Ok, I am the queen of tweaks! I was bored, so I decided to bake But, I didn't have any of the key ingredients - butter and eggs. But then I discovered I didn't have coco or vinegar. So for the coco, I used Milo instead. (I live in australia so I don't know If you have milo over there ;-) ) Its in the oven now.     I had to use Self rasing so didn't use the bicarbonate it's in the oven now and so far it smell yummy!!  -  28 Aug 2012
