Peanut Butter Fudge Cake

About this recipe: Chocolate cake, chocolate icing, but with what a difference. Peanut butter is the magic ingredient. It is spread between the cake and the icing.

  • 250g plain flour
  • 375g caster sugar
  • 1 teaspoon bicarbonate of soda
  • 250g butter
  • 50g cocoa powder
  • 250ml buttermilk
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 375g smooth peanut butter
  • 125g butter
  • 4 tablespoons cocoa powder
  • 80ml buttermilk
  • 500g sieved icing sugar
  • 1 teaspoon vanilla extract

Method

  1. Combine flour, caster sugar and bicarb soda in a large mixing bowl; set aside.
  2. Melt 250g butter in a heavy saucepan; stir in 50g cocoa. Stir in buttermilk and eggs until well blended. Cook over medium heat, stirring constantly, until mixture boils. Remove from heat. Mix into flour mixture, stirring until smooth. Stir in 1 teaspoon vanilla. Pour cake mixture into a greased and floured 20x30cm cake tin.
  3. Bake at 180 C / Gas 4 for 20 to 25 minutes, or until an inserted wooden skewer comes out clean. Cool 10 minutes on a wire rack. Carefully spread peanut butter over warm cake. Cool completely.
  4. To make icing: Combine 125g butter, 4 tbsp cocoa and 80ml buttermilk in a small saucepan. Bring to the boil over medium heat, stirring constantly. Pour over icing sugar, stirring until smooth. Stir in 1 teaspoon vanilla. Spread chocolate icing over peanut butter on cake. Cut into squares.

Took way longer than 20 mins more like an hour. and cake was very crumble couldnt cut it in half as it would have just fallan into a mess. - 28 Jun 2010

Cake was delicious, very moist and soft exactly what you want in a cake. I felt it needed 35-40 mins in the oven but other than that followed the recipe exactly. It was a huge hit for my fiancés birthday. - 01 Aug 2013
