Rich Chocolate Pie

A good friend of mine gave me this recipe last Christmas. I have been using this recipe for dinner parties, coffee morning and simply having friends round for a cup of tea. This pie is particularly good for special occasions like birthday, anniversary or Valentine dinner.

Ingredients

500g short crust pastry
320ml Double cream
2 level spoon Castor sugar
1 small pinch salt
120g soften butter
450g dark cooking chocolate
100ml milk
Cocoa powder for dusting

Preparation method

1. 1. Roll out pastry and line an 18cm flan tin. Bake blind in oven gas mark 6/400F/200C for 25 minutes. Leave the pastry case to cool.
2. 2. Place the cream, sugar and salt in a pan and heat gently. Remove from the heat and stir in chocolate and butter until melted.
3. 3. Allow to cool slightly. Stir in the milk until smooth and shiny.
4. 4. Pour the chocolate filling into the pastry case. Leave to cool in a fridge for 1 hour. Dust with cocoa powder and serve at room temperature.

    I thought the American were good in making pies but this pie recipe has beaten all the American pies that I know. It is absolutely delicious and beautiful.
