Date and Walnut Sugar Cookies

1. Line baking trays with baking parchment and preheat oven to 160 C.
2. Use electric beater to beat the sugar, vanilla and butter together until just combined.
3. Sift the two flours together into a bowl. Add half of the flour into the butter mixture and mix with a wooden spoon. Add cream, mix then add the rest of the flour, dates and walnuts.
4. Mix to a soft dough with your hands adding a dash of milk if it seems too dry.
5. Roll teaspoonsful of dough into little balls and roll them in demerara sugar to coat. Place them on the trays and lightly pat down with the heel of your hand or a flat bottomed glass.
6. Chill in the fridge for 10 minutes: this helps them to keep their shape without spreading too much in the oven.
7. Bake 12-15 minutes checking underneath with a spatula to ensure they are lightly browned. Transfer to a wire rack to cool completely.
