This was my aunt's recipe for fudge, passed down through the family. It's better than any fudge I've ever had, and easy enough to whip up in 15 minutes or so.

Ingredients

200g marshmallow fluff (see footnote)
300g caster sugar
160ml evaporated milk
55g butter
1/4 teaspoon salt
500g milk chocolate, chopped
250g plain chocolate, chopped
60g chopped nuts
1 teaspoon vanilla extract

Preparation method

1. Line a 20cm square tin with aluminium foil. Set aside.
2. In a large saucepan over medium heat, combine marshmallow fluff, sugar, evaporated milk, butter and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly.
3. Remove from heat and pour in chocolate. Stir until chocolate is melted and mixture is smooth. Stir in nuts and vanilla. Pour into prepared tin. Chill in refrigerator for 2 hours, or until firm.

Marshmallow fluff

Find marshmallow fluff at Waitrose, via Ocado or in specialty shops. You may also try using 200g of plain white marshmallows instead.

    Oh yum! The easiest (and the nicest) fudge I have ever made. I didn't bother with the nuts, but that's just personal preference. It seemed to split a bit when I added the chocolate, but I dabbed the top dry with kitchen paper and it didn't affect the end result in the slightest. Great recipe, thanks.
