    About this recipe: A staple for an Ulster fry, tattie farls go great with bacon and eggs. It's also a fantastic way to use up leftover mashed potatoes.

    Serves: 2 

    • 250g (8 oz) floury potatoes (Maris piper is best)
    • 25g (1 oz) butter
    • 50g (2 oz) plain flour
    • 1/2 teaspoon salt
    • 1/4 teaspoon of baking powder

    1. Boil the potatoes until tender. Drain and mash with the butter.
    2. Mix the flour, salt and baking powder and stir into the warm mash to make dough.
    3. Turn on to a floured board (make sure the board is well floured as the dough can be sticky). Roll out to 6mm (1/4 in) thick. Cut into circles (about 15cm / 6 in) and then into quarters. Prick with a fork.
    4. Heat a large heavy frying pan with a little oil. Cook for approx 3 to 4 mins on both sides until golden brown.
