Chocolate chip pumpkin muffins

    This is a yummy muffin recipe that has become an annual tradition, especially for autumn and Halloween parties. Especially tasty when they are still warm, these pumpkin muffins are brimming with chocolate chips!

    Serves: 24 

    • 4 eggs
    • 375g caster sugar
    • 400g pumpkin puree
    • 350ml vegetable oil
    • 375g plain flour
    • 2 teaspoons bicarbonate of soda
    • 2 teaspoons baking powder
    • 1 teaspoon ground cinnamon
    • 1 teaspoon salt
    • 325g chocolate chips

    1. Preheat oven to 200 C / Gas 6. Lightly grease two 12 cup muffin tins, or line with paper cases.
    2. Beat the eggs in a large bowl, and mix in the sugar, pumpkin and oil.
    3. In a medium bowl, mix the flour, bicarb, baking powder, cinnamon and salt. Blend into the egg and pumpkin mixture. Fold in the chocolate chips. Transfer to the muffin tins.
    4. Bake in the preheated oven 15 to 20 minutes, or until a skewer inserted in the centre comes out clean. Remove muffins from tins, and cool on a wire rack.

    You can find tinned 100% pumpkin puree at Waitrose, via Ocado or in specialty shops. You can also make your own with this recipe.

    I love these. Made these for my colleagues at work who were pleasantly surprised that they contained pumpkin. My kids loved them too. Will try and tweak the recipe to make them more healthy next time, but on the whole they are great.  -  04 Feb 2010


    Very good! I reduced the sugar to 250g and it was fine! Also substituted eggs for 4heaping TBSP of apple sauce.  -  21 Nov 2012
