Soured Cream and Bacon Baked Potatoes

About this recipe: This is a cheap and tasty recipe. This recipe is for 2 people, but ingredients can be altered for more! A nice summer dish!

Serves: 2 

  • 2 large baking potatoes
  • 1 teaspoon olive oil
  • 50g butter
  • 2 rashers rindless smoked/unsmoked back bacon
  • 4 chives
  • 142ml carton soured cream

  1. Prick the potatoes all over with a fork and brush with the olive oil.
  2. Place in the centre of a preheated oven at 200 C / Gas 6 for 1 to 1 1/4 hours or until tender.
  3. Using kitchen scissors, snip the chives onto kitchen paper. Set aside.
  4. Grill the bacon rashers, then snip into small pieces with kitchen scissors.
  5. Cut a cross in the top of each baked potato. Spoon over the soured cream onto each potato and top with bacon bits. Garnish with the chopped chives. Serve with salad.
