    About this recipe: Got this recipe from my mother-in-law many years ago. It is really delicious, easy to make, but hard to leave for the 3-4 days recommended before cutting!!

    Serves: 6 

    • 250ml (9 fl oz) milk
    • 85g (3 oz) golden syrup
    • 85g (3 oz) margarine
    • 170g (6 oz) currants
    • 280g (10 oz) self raising flour
    • 1 1/2 level teaspoons bicarbonate of soda
    • 110g (4 oz) sugar
    • 1 pinch salt

    Prep:10min  ›  Cook:1hr15min  ›  Ready in:1hr25min 

    1. Melt together milk, syrup, margarine and currants. Mix with dry ingredients.
    2. Place in a 2lb loaf tin. Bake for 1 1/4 hours at 150 C / gas mark 2.
    3. Leave 3-4 days before cutting (I usually wrap in tinfoil).

    This cake is lovely to make - very easy! There are no eggs in the recipe so it is good for a family memeber who is allergic. Made a few time and each time it doesn't last long!  -  20 May 2010
