Herbed potato soup

    This creamy potato soup is as easy as buying ready made from the shop, but is so much tastier and healthier. Use fresh chopped herbs if you have them.

    Serves: 5 

    • 2 medium potatoes, peeled and diced
    • 500ml water (or veg stock for more flavour)
    • 1 large onion, chopped
    • 60g butter, cubed
    • 4 tablespoons plain flour
    • 1 teaspoon salt, or to taste
    • 1/2 teaspoon dried thyme
    • 1/4 teaspoon dried rosemary, crushed
    • 1/4 teaspoon pepper
    • 350ml milk

    1. Place potatoes and water in a large saucepan; cook over medium heat until tender.
    2. Meanwhile, in another saucepan, saute onion in butter until tender. Stir in the flour, salt, thyme, rosemary and pepper. Gradually add milk. Bring to the boil; cook and stir for 2 minutes. Add potatoes with cooking liquid; heat through. You can mash the potatoes with a potato masher, or leave them in bigger pieces.

    Just about to try this soup I making for me and my boyfriend, didn't have any bay leaves but still, I think it tastes nice with the Rosemary and Thyme. Next time I will buy bay leaves and maybe add some bacon. Tasted a little bit just now and it's really nice!  -  03 Jan 2015
