Spicy Prawn Gambas

This is a Spanish recipe adapted by Filipinos. The Spaniards usually eat this with bread, but most Filipinos have gambas with rice or on its own as a snack while drinking beer.

Ingredients

500g fresh medium-sized prawns
50g margarine or butter
1/2 tbsp tomato sauce or diluted tomato puree
5 heaping tbsp of minced garlic
1 onion, finely chopped
1/2 tsp ground black pepper
2 regular-sized red chillies, chopped
1 tbsp salt
1 tbsp breadcrumbs

Preparation method

1. Unshell and de-vein prawns.
2. In a frying pan or wok, saute and brown garlic in margarine on medium fire. Add onion and chillies. Keep stirring. When onions have turned slightly transparent, add prawns. Stir for about 3 minutes.
3. Add tomato sauce, black pepper and salt. Cover and let cook for about 5 minutes.
4. Add breadcrumbs to thicken sauce. Stir for about 1 minute and serve hot.
